Food allergens

Food allergens are ingested allergens, and thus they come into contact with the body via the mucosa of the digestive system, the oral mucosa and/or intestinal mucosa.

When we talk of food allergens, we are talking about foods and food additives. However, there is also a specific category of ingested allergens, i.e. medicinal products. And this category will be the subject of a separate description, considering its specificity.

In terms of food allergy, there should be a distinction made between true allergy and pseudo-allergy.

Food allergies are responsible for

  • 40 % of cases of atopic dermatitis in children
  • 10% of cases of asthma and rhino-conjunctivitis
  • 10% of cases of anaphylactic shock.
