Strawberry ice cream

Free from eggs, nuts and dairy products

Ingredients

  • 550g soft tofu,drained
  • 300g strawberries
  • 180g caster sugar (or to taste)
  • 120 ml soya milk
  • 2 tablespoons. fresh lemon juice
  • 1 tablespoon vanilla extract (optional)
  • Pinch of salt

Method 

                                                                                                                                        Cut the strawberries into small pieces and mash.  Blend all other ingredients together, in an electric blender if possible.  Add the strawberries and mix well.  Either use an ice-cream maker and follow the manufacturer’s instructions, or place in a freezer-proof container and mix well every 45 min to break up ice crystals until frozen solid.

Use within one week
