Ingredients 50g butter 50g flour 1/2l milk Salt, pepper and nutmeg

Melt the butter in a thick bottomed pot until it becomes frothy. Add the flour all at once and mix to obtain a uniform ball of dough. Pour in the warm milk little by little while stirring to obtain a smooth consistency without lumps. Chef's tip: this filling can be used as base for all eggless savory quiches. |
